Prosecco is made differently to the other types of fizz. It's fermented once in the bottle and in steel vats. Although some of the better prosecco are double fermented in the bottle in the same way as champagne, cava and the French Cremant.
Cremant de Limoux, also from the Loire region, has a lighter flavor and is more fruity than other champagnes from the region, making it a good option for those who prefer a less dry and more refreshing champagne. Cremant is much drier and has a stronger flavor profile than prosecco, with heavier flavors and a more fizzy finish.
Prosecco. Prosecco is essentially Italy’s version of Champagne, and its most well-known alternative. It belongs to the spumate (sparkling) category of Italian wines and closely resembles the creamy bubble of Champagne. Prosecco is produced in Northern Italy using Glera grapes, which give it stronger fruit and flower notes.
It’s hard to go wrong with sparkling wine with classic canapés such as smoked salmon, crostini or mini quiches. For some that’s likely to be prosecco but many people these days prefer a drier sparkling wine such as a crémant or a Cava. The lees in the bottle give Champagne its unique creamy texture. The bottle fermentation also results in much higher pressure fizz (5-6 bars) than Prosecco, which has only 2-3 bars of atmospheric pressure. The Champagne method is quite lengthy, labor-intensive, and thus more costly.
Make sure the wine is Brut or Extra Brut to avoid headaches (unless it’s Prosecco). Keep in mind that wines made with the tank method (like Prosecco) are significantly less bubbly than real Champagne—by 3-4 atmospheres of pressure. Look to regions not named Champagne, but still producing wine through the same method.
What is Cremant de Bourgogne Brut? Crémant de Bourgogne is the appellation for sparkling white and rosé wines of Burgundy, made predominantly from Pinot Noir and Chardonnay grapes in the methode traditionelle. Crémant de Bourgogne wines may be white or rosé. They can vary in sweetness levels from brut (dry) to sec (medium).
